
1 can pinto beans, rinsed and drained
1 cup baking cocoa
¾ c butter, melted
1 T vanilla powder
7 ½ c powdered sugar
1 c walnuts
In a microwave-safe dish, mash beans with a fork until smooth; cover and microwave for 1 ½ minutes or until heated through. Add cocoa, butter & vanilla. Mixture will be thick. Slowly stir in sugar; add nuts. Press mixture into a 9-in pan, coated with Vegalene. Cover and refrigerate until firm. Cut into 1" pieces. Yield: about 3 ½ #. I'm going to try to replace some of that sugar & baking cocoa with milk chocolate chips. I would also puree the beans in the Bosch Food Processor to get them as smooth as possible.
