In sauce pan, bring to a boil & let cool ~
1 C rolled grain
2 C dried fruit (2/3 C each dates, apricots & cranberries) (The next time I
used about 2 C each diced apples & cranberries and about 2 more C of water.
We gave it to our neighbors as Easter bread…WOW!!!)
4 C water or substitute equal parts apple juice & water
In Bosch bowl, mix and let sit 20 minutes ~
1 C plain natural yogurt
1/3 C olive oil
3 T SAF yeast
1 C warm water
3 C fresh flour
Pour fruit mixture into the Bosch and add
½ C wheat germ
2 T dough enhancer
¼ C vital wheat gluten
1 T salt
½ C flax meal
about 9 more C of flour and mix until the dough comes away from the sides of the bowl
Mix until the dough is soft, smooth & sheets like bubble gum
Let rest 5 minutes. Shape as desired or place in pans. Let rise 20 minutes in warm oven. Bake at 350 from 25 - 40 minutes depending on the size of pan etc.
