Oatmeal Coffee Cake

For a lower fat intake, try this method. This recipe originally called for 1/2 C butter. Replace it with reconstituted, pureed apple rings for a very moist, pleasing breakfast treat.

Combine 1 1/4 rolled oats and 1 1/2 c boiling water. Let stand while mixing other ingredients.

In a glass 2 Cup measure, cut up 10-12 dried apple rings. Add water to the 1 Cup line. Microwave on high 3 minutes or until tender. Pour into blender or food processor & puree.

To the puree add:
3 eggs
1/2 c sugar
1 1/2 c whole grain flour
1 t soda & cinnamon
1/2 t salt

TOPPING:
2 T soft butter
1/4 c brown sugar
2 T ground flax seeds
1 t cinnamon
coconut & chopped nuts

Mix cake ingredients in food processor, add oatmeal. Pour into a 9 x 13 pan. Sprinkle topping, coconut & nuts on cake. Bake at 350 for 30 minutes. Enjoy!!

Use this same recipe with a broiled frosting for a finishing touch to dinner.

Combine and spread over baked cake:
2 T soft butter
1/2 C brown sugar
1/4 C milk
3/4 C coconut
3/4 C chopped nuts

Place about 5 inches below heat source & broil until topping is brown & bubbly, about 2 minutes. Recipe courtesy of GloryBee Foods, Inc
