Why Whole Grains?

Why would anyone want to go to all the trouble of milling their own flour & 'taking all day to make bread', when they can go to Carrs & buy a loaf of brown bread for $3 or $4? I'm glad you asked. I was just mounting my 'soap box.'

Do you know anyone who suffers from constipation, appendicitis, hemorrhoids, diverticular disease, hiatal hernia, varicose veins, heart disease, diabetes, obesity, large bowel cancer, or gallstones? These are referred to as Western Diseases. Underdeveloped countries are essentially free of these maladies that are prevalent in our culture. WHY? What's their secret? These cultures don't process their grains, eat white sugar, or gorge themselves on fast foods. They eat grains the way God created them. Our commercial mills strip grains of their rich nutrients, leaving behind colorless, tasteless, deficient bleached flour. When traveling, my body tells me, 'I'm hungry, feed me real food!' Fatigue and irritability - kick in when I leave grains behind.

Balancing various components - germ, bran, endosperm - God locked in over 26 nutrients in each wheat berry, including calcium, iron, magnesium, potassium, vitamins E, B1, and Folic Acid. Within 3 to 5 days, 90% of the nutrition is lost due to oxidation, like a banana that rests too long on the counter. After a while, the flour tastes bitter because of the rancid germ oil. "Give us this day our DAILY bread." God knew what He was talking about! For an engine to run, it has to have all its parts, tuned up just right, in the right place, firing at the right time. God created our bodies and the fuel we need to perform. We don't fill a gas engine with diesel fuel. Why should we feed our bodies with processed food, void of nutrients, when we perform best on 'Supreme Fuel.' You wouldn't feed a thoroughbred race horse donuts, coffee, soda, McDonald's burgers & French fries. Why defile yourself with such fare?

Our good health may be regained and maintained by introducing whole grains into our daily diets and reducing fat, refined sugar and 'box food' intake. Add a little salt, and cook it like Cream of Wheat. Flavor with raisins & nuts. By investing 5 minutes to prepare it, you'll be set for hours for only pennies. I like to add fresh ground flax seeds, rich in Omega-3 & Omega-6 oils. The abundance of live enzymes restores tired bodies and stressed minds. If your digestive systems cries for help, try soaking the grains or flour overnight. Then cook in the morning. Sprouting is another alternative.
